Make the coffee and let it cool, then prepare the other ingredients.Separate the egg yolks from the egg whites into two vessels. Put the sugar over the yolks.Using a mixer, set at medium speed, mix the yolks with the sugar.
Mix the yolks with the sugar for about 2 minutes, until the sugar is completely dissolved. Mascarpone is rubbed until slightly softened and put over the cream of the yolks. Using the mixer, mix the mascarpone cheese with the yolk cream.
Mix the mixture for 1 minute, until a homogeneous, glossy look is obtained.
Mix the egg whites for about 2 minutes, until a foam comes off the pan.To the mascarpone cream and yolk, add the whipped egg whites and mix.The pickles are soaked in the coffee syrup with cognac and placed in a tray, as shown.
Over the pickles, put 1/2 of the cream of ma-scarpone. Add another layer of pickles. Spread the rest of the cream and top with cocoa. Put in the refrigerator for at least 3 hours
